On Wednesday, 22 April, Le Pristine Singapore offers a rare masterclass in patience and purity. Andrea Bezzecchi, a leading advocate for authentic Italian balsamico, will guide guests through a tasting journey that defies commercial shortcuts. Unlike mass-produced alternatives, these vinegars are crafted exclusively from cooked grape must and aged for decades.

The evening features a semi-buffet of Italian delicacies, but the true highlights are five plated dishes designed to showcase the evolution of balsamic vinegar. The experience culminates in a tasting of the 25-year-old Gold Label Tradizionale, a liquid treasure aged in wooden barrels to reach the pinnacle of complexity and sweetness.

Each fish is hand-milked under a natural anaesthetic and returned to the water, ensuring a sustainable cycle that honours the environment.

Guests can explore six distinct expressions of roe, ranging from the classic First Harvest Atlantic Salmon Pearls to innovative infusions like Bloody Shiraz Gin and Truffle. These pearls, a staple in Michelin-starred kitchens globally, offer a burst of saline elegance that elevates the evening buffet experience.

The Arrival of “White Gold”: Asparagi Bianchi at Pete’s Place

Known as “white gold” due to its labour-intensive cultivation beneath mounded soil, this tender vegetable is available only from 13 April through 31 May.

The specialised menu features Northern Italian inspirations, including:

Roasted Veal Loin with a zesty Piedmontese Brusca sauce.

Aged Carnaroli Risotto balanced with creamy Robiola cheese and the sweetness of white asparagus.

Seared Red Snapper, highlighting the delicate flavour contrast between white and green asparagus varieties.

Each dish is complemented by a curated selection of wines from the Veneto and Franciacorta regions, specifically chosen to balance the subtle bitterness and finesse of the asparagus.
