Chef Christian Le Squer, a celebrated Michelin three star chef and doyen of French fine dining, proudly joins as Chef at La Maison 1888 at InterContinental Danang Sun Peninsula Resort, introducing a new chapter in the restaurant’s journey. La Maison 1888 had received one Michelin star in July, making it the only restaurant in central Vietnam to achieve so. With the help of Chef Christian and his distinct style of fashion-infused contemporary haute cuisine, the restaurant is sure to reach new heights in the near future.

He is, quite simply, one of the world’s greatest chefs – the holder of three Michelin stars for 22 consecutive years and global ‘chef of the year’ by Gault & Millau in 2023. Chef Christian’s achievements may as well be attributed to the environment he emerged from. The chef grew up in a coastal community in Brittany and often helped his uncle in his fishing endeavours. This may have sparked his passion for the epicurean arts, and thus he embarked on over to Paris, earning his first Michelin star at Café de la Paix. Then in 1999, he secured three Michelin stars at Pavillon Ledoyen, and again repeated his achievement at Le Cinq, a French restaurant at Four Seasons Hotel George V in Paris. These astounding achievements truly highlight his successful career and expertise.
The cuisine at La Maison 1888 will undoubtedly be elevated by Chef Christian. As he includes his personal creative touches and infuses Vietnamese influences, every dish he puts out will present itself like artwork, with his artistic use of vibrant colours to bring out the dish’s beauty. The chef believes in “moving” – which is to say he moves on with different menus every time a fresh ingredient is no longer available in his desired quality due to the seasons. Therefore, his menus change every season as he crafts them with passion and ensures only the topmost quality dishes, featuring the country’s local produce and fresh seafood.
“Having taken several trips to Vietnam, and especially to Danang, I have been able to understand the clientele and what they want. They come to taste a menu that balances tradition and innovation in French culinary art, and they also come to experience the elegance that represents haute cuisine,” claims Chef Christian.
“I have immersed myself in the atmosphere and the people, discovered the flavours, new ingredients and the culture of Vietnam, so I could compose my cuisine. I am very much looking forward to working with the talented team at La Maison, including Chef de Cuisine Florian Stein,” the chef continues.
La Maison is one of the most exceptional restaurants in South East Asia. In addition to being situated in a sophisticated colonial Indochine-style mansion designed by Bill Bensley, the restaurant is also known for its extensive wine collection in its Wine Cellar.
