Chef Yoka’s dish beautifully mirrors this philosophy of balance and contrast. Tender slices of A5 Miyazaki beef, its marbling like delicate snowflakes, juxtaposed with the rich, gamey notes of aged duck breast. Accompanying these are vibrant pops of flavour from lime kosho and the deep, mellow sweetness of fermented garlic and glazed fig, all brought together by the freshness of seasonal vegetables. Each component is carefully chosen to create a delightful play on contrasting textures and tastes, a culinary representation of the rainforest’s captivating duality.

“Of East and West” is a dessert crafted by Chef Lilian that artistically blurs the lines between Eastern wellness philosophies and Western artistic expression. This creation beautifully reflects Chef Lilian’s own personal journey. It tells the story of a Westernised local girl, inspired by the beauty of duality. She utilises delicate slices of lotus root and the subtle nuttiness of lotus seed, embraced by a silken custard, topped with the shimmer of 24-karat gold. This dessert is a symbol of cultural convergence, where the wisdom and traditions of the East seamlessly intertwine with the creativity and innovation of the West, a combination of two opposite ends of the world.
