Hilton properties across Malaysia are gearing up for Ramadan – introducing a delectable array of dining options designed to delight every palate. To celebrate the holy month, Hilton unveils its Ramadan campaign theme, “Nikmati Sajian, Eratkan Jalinan,” which translates to “Savour the Delicacies, Foster the Bonds.” Ramadan holds a special place in the hearts of Muslims worldwide, a time for reflection, faith, and community. A cornerstone of Ramadan is Iftar, the evening meal that breaks the day’s fast, providing an opportunity to connect with loved ones and strengthen community bonds over shared meals – which is exactly what Hilton aims to achieve with their scrumptious Ramadan offerings.
Recently, we had the opportunity to attend Hilton’s Ramadan Showcase – a grand culinary showcase from 8 Hilton properties across Malaysia featuring the talents of 8 chefs representing each location. The event started with an array of tantalising appetisers served and presented across various stations, inviting guests to freely explore and savour the selections at their leisure.
We started with the “Beef and Vegetable Foldover” from DoubleTree by Hilton Melaka. This elevated version of the classic Murtabak tantalised the taste buds with a symphony of spices, combined with the juicy beef and sweet vegetables – creating an unforgettable appetiser experience.

We then moved on to Hilton Kuala Lumpur’s station, where we discovered the most intriguing “Perak Cage-Free Egg Salad with Green Herbs Emulsion”. Chef Ridzwan Rasit eagerly described the dish, which was creatively presented within an eggshell. This interactive appetiser required guests to squeeze the green herb emulsion onto the salad before mixing. The unexpected presentation and the burst of flavours upon consumption made it a truly unique and engaging experience.

However, I would argue that the highlight of the appetisers goes to the “Rock Lobster Otak-Otak” by DoubleTree by Hilton Shah Alam i-City. It was presented in a triangular shape, reminiscent of Japan’s onigiri. This vibrant presentation is far more than just eye-catching; each element explodes with flavour. The interplay of coriander, succulent lobster, and the rich, savoury sauce creates a harmony of taste that is truly divine.
Although tempted by the diverse array of appetisers, we couldn’t try them all as we knew we had to save room for the true star of the show – the main dishes. For the sampling of the main courses, we were invited to be seated while each chef took centre stage, passionately introducing their signature dishes.
Hilton Kuala Lumpur
The two dishes presented were the Australian Lamb Neck Assam Pedas, and a 4-Hour Slow-Baked Australian Beef Short Rib with Serunding Kelapa and Sambal Strawberry. Both dishes showcased meats cooked to perfection, offering a truly melt-in-your-mouth experience. A standout feature was the Sambal Strawberry in one of the dishes. Who would’ve thought to infuse strawberries into a sambal? But the flavours worked, and they worked really well. The strawberry imparts a subtle sweetness that complements the other flavours beautifully, leaving you wanting more with each bite.

Chef Badrul from Hilton Petaling Jaya presented the Daging Kepal Rebus with Bawang and Cili Jeruk in Kuah Lemak Cili Padi, and Kambing Hiris with BBQ Szechuan Sauce served with a Mantau Bun. As a fervent fan of Kuah Lemak Cili Api, I was delighted by this dish, which perfectly embodies the creamy, spicy flavour profile it is famous for. The Kambing Hiris in Mantau Bun was a delightful surprise. The fluffy Mantau provides a delightful canvas for the savoury sliced lamb, creating a harmonious blend of sweet and savoury.

The Australian Lamb Assam Pedas and Chef Zul’s Kari Udang Mamak were the highlights of this establishment. The Assam Pedas’ spicy and tangy flavours enveloped the tender lamb in a fragrant embrace. The Kari Udang Mamak, a local masterpiece, boasted plump, juicy prawns swimming in a rich curry. Both dishes were divine, and showcased authenticity and multicultural appeal.

The Salmon Percik Kepit Buluh and 12-Hour Slow-Cooked Harissa Marinated Beef Leg with Yemini Kabsah were a delightful combination of mains. The surprising blend of Nusantara paired with Middle Eastern flavours creates a truly unique and unforgettable culinary journey for food enthusiasts. I particularly enjoyed the Yemeni Kabsah, the aromatic and flavourful rice dish pairs very well with the tender beef leg.

The delectable mains introduced were the Kambing Kerutuk Mak-Mak and the Udang Salai Lemak Belimbing Buluh. The lamb boasted a rich, meaty flavour that will delight any carnivore. The prawn dish was a creamy symphony of spice. While spice enthusiasts will savour every bite, those with a lower tolerance should proceed with caution. However, even a few drops of the sauce offer a tantalising taste of the dish’s vibrant flavours.

The buffet is priced at RM198 nett per adult and RM99 nett per child. Available this Ramadan from 3 -30 March, 6:30pm to 10:30pm.
DoubleTree by Hilton Melaka
We were served with a Beef Cheek Assam Pedas and a Nasi Lemuni Solok Lada Salmon. Having never encountered Nasi Lemuni before, I was both surprised and intrigued when it was presented to us. As a rice enthusiast, I was delighted to find that the Nasi Lemuni was incredibly aromatic and flavourful. It complemented the Solok Lada Salmon beautifully and proved to be the perfect accompaniment to the Beef Cheek Assam Pedas.

The delectable Rendang Tok Short Rib Salai and Masak Lemak Cili Api Ayam Kampung with Rebung were a burst of authentic Perak flavours. Both dishes were a symphony of rich and vibrant flavours. DoubleTree Resort by Hilton Penang
A quintessential Penang culinary experience revolves around Nasi Kandar, a renowned local speciality. Among the beloved dishes gracing Nasi Kandar stalls is Ayam Bawang. Drawing inspiration from this tradition, DoubleTree Resort by Hilton Penang presents two signature dishes: Ayam Bawang Mamu and Daging Pesamah Utara with Pulut Kuning. The Ayam Bawang Mamu boasts succulent and tender chicken, while a generous sprinkling of fried shallots delivers a delightful explosion of flavours. The Pulut Kuning is equally enticing, with soft, fragrant rice perfectly complementing the savoury beef within.

The Ramadan Dinner Buffet is priced at RM118 nett per adult and RM59 nett per child. Available from 7 – 29 March, 6:30pm – 10:00pm.
Finally, guests were invited to indulge in a delightful array of desserts. Despite everyone’s full stomachs, there’s always room for something sweet. The dessert stations boasted a captivating selection of durian-themed creations, including Durian Choux and Musang King Fritters. Among all the desserts, I found the Cendol Panna Cotta with Sarang Madu Lebah and the Medjool Dates Pudding with Gula Melaka Butterscotch as rather intriguing based on their gorgeous presentations. However, I only had room for one more dish. After careful consideration, I opted for the Black Glutinous Pandan Crema Catalana Pudding from Hilton Kuala Lumpur. The black glutinous rice provides a delightful textural contrast to the silken pandan pudding, while the fragrant santan syrup bathes the dessert in a harmony of flavours.
All in all, the upcoming Ramadan is looking to be a bright one. With good food, good company, and most importantly, a time of faith and spiritual renewal.
